Tarte Tatin z jabłkami i truskawkami

Dziś przedstawiam przepis na chyba najłatwiejsze ciasto jakie znam – Tarte Tatin. Przepis na tą klasyczną tartę autorstwa Michela Rouxa pojawił się już u mnie na blogu, a dziś przedstawiam wersję wzbogaconą o truskawki :-) Takim też sposobem powstała obłędnie pyszna tarta na cieście francuskim z jabłkami i truskawkami, dosłownie ociekająca karmelem. Przepis jest bardzo łatwy w przygotowaniu, jestem pewna, że każdy sobie z nim poradzi. Zapewniam, że warto!

Tarte Tatin z jabłkami i truskawkami

(8 porcji)

Składniki:

  • 3 duże jabłka, obrane, z usuniętymi gniazdami nasiennymi i pokrojone na ćwiartki
  • 1 szklanka truskawek, bez szypułek
  • sok z 1/2 cytryny
  • 1 i 1/3 szklanki cukru + dodatkowe 2 łyżki
  • 6 łyżek masła + dodatkowe 2 łyżki
  • 1 opakowanie ciasta francuskiego

Przygotowanie:

  1. W większej misce wymieszaj ćwiartki jabłka z sokiem z cytryny i 1/3 szklanki cukru i odstaw na 20 minut. W oddzielnej misce wymieszaj truskawki z 2 łyżkami cukru i także odstaw na 20 minut.
  2. Rozgrzej piekarnik do 200 ° C.
  3. W żaroodpornej patelni o średnicy ok. 24 cm lub innej metalowej formie dostosowanej do zapiekania w piekarniku, rozpuść na średnim ogniu 6 łyżek masła. Wsyp 1 szklankę cukru i 3-4 łyżki soku, który powstał w misce z jabłkami. Gotuj na średnim ogniu, cały czas mieszając przez około 15 minut, aż cukier się rozpuści i powstanie jasno-brązowy jednolity karmel.
  4. Zdejmij patelnię z ognia i ułóż w niej jabłka okrągłą stroną do dołu. Wyłóż na nie 2 łyżki masła i ponownie umieść na średnim ogniu. Gotuj przez około 10 minut, polewając jabłka od czasu do czasu wrzącym karmelem.
  5. Rozsuń jabłka na boki i na środek formy wyłóż truskawki. Gotuj na średnim ogniu przez kolejne 10 minut aż karmel zgęstnieje, polewając nim owoce od czasu do czasu.
  6. Na posypanej mąką powierzchni, rozłóż ciasto francuskie i wytnij z niego koło o 1 cm szersze niż średnica patelni. Umieść ciasto na jabłkach a brzegi powciskaj między owoce a brzegi patelni, natnij ciasto w kilku miejscach.

Apple and strawberry Tarte Tatin

(8 servings)

Ingredients:

  • 3 large apples, peeled and quartered
  • 1 cup whole strawberries
  • juice of 1/2 lemon
  • 1 1/3 cups and 2 tablespoons granulated sugar
  • 6 tablespoons plus 2 tablespoons unsalted butter
  • 1 sheet puff pastry

Preparation:

  1. Toss the apple quarters in a large bowl with the lemon juice and 1/3 cup of the sugar. Set aside for 20 minutes to release the juices. In a separate bowl, toss strawberries with 2 tablespoons sugar, let them sit for 20 minutes as well.
  2. Preheat the oven to 200 oC.
  3. Melt 6 tablespoons of butter in an oven-proof 24 cm skillet. Add 1 cup of sugar and 3-4 tablespoons of apple-lemon juices. Cook the mixture on medium heat, stirring constantly, for about 15 minutes, until mixture thickens, becomes smooth, and turns pale caramel color.
  4. Remove the skillet from the heat, add apple quarters, round side down in a decorative pattern in a circle along the side of the skillet. Top the apples with the remaining 2 tablespoons of butter, sliced. Cook the apples over medium-low heat for about 10 minutes, occasionally spooning the bubbling caramel liquid over them.
  5. Add strawberries in the middle of the pattern and continue cooking both strawberries and apples for 10 more minutes on medium high heat, constantly stirring the liquid, pouring it over apples and strawberries, until the caramel sauce reduces and thickens.
  6. On a floured surface, roll the puff pastry sheet and cut out a circle about about 1 cm wider all around than the skillet. Make 4 cuts in the pastry for breathing during baking. Place the puff pastry circle over the apples and the strawberries in the skillet, tucking the overlapping portion down between the apples and the inside of the pan.
  7. Place the skillet in the oven, and bake for about 40 minutes, until the pastry has puffed up, and is dry and golden brown. Remove the skillet from the oven, and let it to rest for a minute or two. Place a serving platter upside-down over the skillet and invert the tart onto the platter. Be very careful not to burn yourself as the skillet is very hot. Rearrange any apple slices that may have slipped or stuck to the skillet.
